We love chicken fingers (also called tenders or strips) at our house. At the grocery store, my children tend to drag me to the frozen aisle, wanting “chicken fingers and fries”.

The problem with those chicken fingers, though … well, the problems plural!

That breading, which gives me and one of my children stomach cramps.

The oils used.

The weird chemical ingredients.

And the price.

Even though they look inexpensive, those frozen chicken fingers are very expensive by the pound. There’s nothing really going for them other than convenience, and you really pay for that convenience.

Children don’t realize that – they see the packaging and love how easy it is to make. So it’s our job to steer them towards healthier versions of food they love.

These chicken tenders aren’t like that. No funny ingredients. No troublesome wheat – they’re gluten free and dairy free. Buy the chicken on sale (or even turkey – there’s nothing special about chicken) and make them far more affordable.

Serve it with homemade oven-baked fries and a healthy salad.

Preheat oven to 400C and gather all your ingredients.

Slice the chicken into half an inch thick strips to ensure that they cook quickly and evenly.

In a bowl, combine the soy sauce, paprika, curry powder, honey, and olive oil.

Dump in the chicken and mix. Season with salt and pepper to taste.

Let the mixture stand for 10-15 minutes.

Place in a roasting pan and spread evenly so that the chicken pieces are just 1 layer.

Bake for 20 minutes and done! Totally reuse the aluminum pan someone gave you at Christmas, because this stuff is sticky and messy.

Garnish with diced green onion and enjoy!

Now that I make this, the children aren’t dragging me over to the frozen meat section anymore. These are delicious, healthy and they don’t take any longer to make than the frozen chicken fingers.

Prepare quick cooking Herb Roasted Vegetables to serve with these, toss up a salad and you have a complete meal that will fill everyone.

  • 2 lb chicken breasts, sliced into finger-thick slices
  • 1/2 cup honey
  • 1/3 cup dark soy sauce
  • 3 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 1/2 to 2 tablespoons curry powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400F and gather all your ingredients.
