Chicken patties with apple and ginger are quick to make at home and taste far better than storebought. Make this recipe for a quick snack or lunch.
What happens when you feel like having meatloaf, dim sum and chicken burgers? Since I’m not about to go out for dinner and I don’t think I could find a buffet with all of that included, I got creative.
Plus, you know, I had those chicken breasts tucked away in my freezer from when they were on sale.
Perhaps you’ve never combined chicken and apple? When I make chicken salad for sandwiches, I almost always dice up some tart apple to go in it. It’s a delicious combination, and it’s just as good in these chicken and apple patties.
Chicken breast does not need to be prepared the same way time and again. For today’s recipe, we took some inspiration from the lowly meatloaf, the dim sum, and the classic burger patty to create a unique chicken breast dish. This dish is low in calories, very flavorful, and low in fat. It is as delicious grilled as it is baked and uses less than 10 ingredients!
You’ll need to start with putting your chicken breast through the meat grinder or pulsing it in your food processor. Of course if you already have ground chicken breast, you can use that, too! You’ll need 1 pound ground chicken for every two servings.
If you’re making them for a snack or appetizer, you could stretch it to six servings.
Put the ground chicken in a bowl along with 1 diced tart apple, 1 diced fresh onion, 1 teaspoon grated ginger root, 1 teaspoon minced garlic, 1/2 teaspoon pepper and 1/2 teaspoon salt.
Mix them all together until all the spices are blended into the meat.
If the chicken patty mixture is too sticky or wet, add a few tablespoons of breadcrumbs just until it stays together and does not fall apart.
Divide into 6 portions and chill until ready to cook.
To cook, form into 1/3-inch-thick patties. Fry on both sides over medium heat for about 3-4 minutes or until juices run clear.
Serve warm over buns or on a salad. You can eat these as fun little sliders or just as cooked chicken patties on your plate.
Of course you can double this as much as you need to, and you can also make larger patties – they’ll take longer to cook, though.

- 1 pound ground chicken breast
- 1 apple, grated coarsely
- 1 medium white onion, finely minced
- 1 teaspoon grated garlic
- 1/2 teaspoon grated ginger
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon coarse salt
- 1/4 cup coarse breadcrumbs
- Mix all ingredients except the breadcrumbs.
- If the mixture is too soft, add a bit of crumbs until it stays together.
- Divide in six portions and cool until ready to cook.
- Form patties. Fry on both sides over medium heat for about 3-4 minutes or until juices run clear.
- Make 6 small slider-sized patties.
