We’re not grain-free at our house – sometimes I think grains are one of the few foods we can all safely digest – but we do find ourselves cooking for grain-free folks a lot. And we still need to worry about tree nuts, soy and other major allergens.

The danger when you buy a cookbook, or just find random online recipes – you never know if they’ve actually been made in normal kitchens, eaten by fussy children and enjoyed by … well, you know, real people.

You probably know that not-so-lovely feeling when you have to get that turkey on the table STAT and you just realized that Aunt Martha can’t eat eggs. So much for the hours you spent baking all weekend.

You need tried and true, family-tested traditional favourites. But you also need to tweak them for them to fit your family’s dietary needs.

That’s hard enough when you need to remove something simple like nuts. (Never thought I’d say that!) But what if you need to follow a really strict diet like GAPS?

Since I know a lot of my readers follow GAPS, grain-free diets, I’m quite excited about Jaclyn’s new cookbook.

Jaclyn’s cookbook is grain-free and GAPS compliant but it does contain almonds and other nuts. If you can tolerate nuts, you’ll love this cookbook!

With that said, it contains staple recipes that help you make basics like perfect cauli-rice and honey “wheat” dinner rolls. If there are no concerns with nuts, she has a grain-free pecan pie that looks good. Just be sure to keep ingredients lists handy for those who are nut-free!

Figgy Pudding

Ingredients

  • 1 1/2 cups water
  • 1 cup figs, coarsely chopped, plus extra for garnishing
  • 1 cup pitted dates
  • 1/2 cup honey
  • 1/2 cup raisins
  • 3 eggs
  • 1/4 cup coconut flour
  • ¼ cup butter, or ghee
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking soda
  1. Preheat oven to 350°.
  2. Grease four one-cup ramekins.
  3. Combine figs, dates, and water in a medium saucepan and bring to a boil over medium heat.
  4. Turn heat down and simmer 10-15 minutes.
  5. Pour mixture into the container of a high-powered blender, add baking soda, and blend on high until smooth.
  6. Return mixture to saucepan and add butter, eggs, vanilla, and cinnamon and whisk until combined.
  7. Add coconut flour and whisk until smooth.
  8. Fold in raisins.
  9. Pour the batter evenly into prepared ramekins, filling each just over halfway.
  10. Bake for 35-40 minutes.
  11. Top with sliced figs and serve warm.
