Mrs Bauman’s Lazy Oatmeal Cake uses leftovers to make a delicious and quick family dessert. Like so many Mennonite recipes, it not only uses leftovers, but it’s easy and inexpensive.

My nephew came running downstairs when my sister baked this cake, wanting to know why the house smelled so … delicious! It’s Mrs Bauman’s Lazy Oatmeal Cake, and it will have your family running to the oven, too.
Lazy is not a word that has ever been used to describe Mrs. Bauman. She is an Old Order Mennonite widow, active to a degree that would shame women half her age.
She does make delicious cakes. As I say in my cookbook A Cabin Full of Food, if I tell you a recipe comes from Mrs Bauman or her daughter Mrs Martin, you can trust that it’s a family pleaser!
Every time I visited her, she would give me a delicious cake to take home for the family, packaged to go in a recycled cereal box. Finally, I had to ask her for the recipe, and now you have it, too.
I suggest that this cake become your “go to” – not only is it easy to make, but it stays moist and delicious for a very long time. It uses up leftover oatmeal, which I always seem to have around, and it is easily varied.
My little sister called me to complain that she’s trying to make this cake but her children never leave any leftover oatmeal. These lovely photos are hers – she’s always been an excellent baker.
Cream 1/2 cup butter with 2 cup sugar and 2 tablespoons molasses.
Beat in 2 eggs and 1 teaspoon vanilla.
Add 1 cup leftover oatmeal.
Mix 1 1/2 cups flour, 1 teaspoon baking powder, 1 teaspoon salt, 3/4 teaspoon cinnamon and 1/4 teaspoon nutmeg.
Add to creamed mixture.
Pour into a greased and floured 8×8” baking pan.
Bake at 350F for 30 minutes. Watch the cake, not the clock. If your oven cooks slow, it might take a bit longer.
You can certainly double it, and it will take about 60 minutes, depending on your oven. It will cook more evenly in two 8×8″ pans, though.
Variation – I have to admit that I have often played with Mrs. Bauman’s recipe. Lazy Oatmeal Cake is so easy to put together, and inexpensive, but it takes easily to variations.
My leftover oatmeal often has lots of fruit in it, like chopped apples, so I adjust the amount and use 1 1/2 cups oatmeal with fruit.
Or you could use the 1 cup oatmeal and add 1/2 cup chopped fruit to the batter.
My niece and nephews taste-tested this recipe and give Mrs. Bauman’s Lazy Oatmeal Cake four thumbs up!
Instead of creaming the butter and sugar, I sometimes melt the butter and mix the wet ingredients, then the dry, and combine. It probably isn’t good enough for company when I do that, but it’s good enough for four children to inhale in five seconds.
Since my leftover oatmeal is already spiced, I leave those out. Sometimes I add 1 cup chocolate chips or 2 tablespoons cocoa. If you like nuts, you could use those instead of chocolate chips.

- 1/2 cup butter
- 2 cups sugar
- 2 tablespoons molasses
- 2 eggs
- 1 teaspoon vanilla
- 1 cup cooked oatmeal
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Cream the sugar, molasses and egg. Stir in vanilla and oatmeal.
- Combine the dry ingredients and add to the creamed mixture.
- Pour into a greased and floured 8×8” baking pan.
- Bake at 350F for 30 minutes.
